History

In November 1989, Monde Nissin entered the instant noodle segment with Lucky Me!. It launched Instant Mami, noodle with soup in pouches, in Beef and Chicken variants. Eventually, these became the fastest-selling products like beef and chicken flavor. 1991 saw the introduction of Lucky Me! Pancit Canton, the first dry stir-fry pouched noodles in the Philippine market. This was then followed in 1995 by Lucky Me! Supreme in La Paz Batchoy flavor, marketed as the first Filipino dish-flavored no-cook cup noodles, and Lucky Me! Special in 2009, which consists of noodles based on local and international flavors such as Lomi (egg noodles in seafood flavor), Jjamppong (spicy Korean noodles), Curly Spaghetti, Baked Mac, Mac & Cheez, and Cheese Ramyun.

Kantar Worldpanel cited Lucky Me! in their 2014 Brand Footprint Report as the most chosen and purchased consumer brand in the Philippines, reaching almost all Filipino households.

History

Ramen is a Japanese[6] adaptation of Chinese wheat noodles.[7][8][9][10][11] One theory says that ramen was introduced to Japan during the 1660s by the Chinese neo-Confucian scholar Zhu Shunsui who served as an advisor to Tokugawa Mitsukuni after he became a refugee in Japan to escape Manchu rule and Mitsukuni became the first Japanese person to eat ramen. Most historians reject this theory as a myth created by the Japanese to embellish the origins of ramen.[12]

According to historians, the more plausible theory is that ramen was introduced to Japan in the late 19th[7][13] or early 20th century by Chinese immigrants living in the Yokohama Chinatown.[14][15] According to the record of the Yokohama Ramen Museum, ramen originated in China and made its way to Japan in 1859.[13] Early versions were wheat noodles in broth topped with Chinese-style roast pork.

Name

Chicharrón, as a dish with sauce, or chicharrones as finger-food snacks, are popular in Andalusia and Canarias in Spain, Latin America and other places with Spanish influence including the Southwestern United States. History

The Belgian food historian Pierre Leclercq has traced the history of the french fry and asserts that "it is clear that fries are of French origin".[31] Fries are first mentioned in 1775 in a Parisian book, and the first recipe for modern French fries is in the French cookbook La cuisinière républicaine in 1795. They became an emblematic Parisian dish in the 19th century. Frédéric Krieger, a Bavarian musician, learned to cook fries at a roaster on rue Montmartre in Paris in 1842, and took the recipe to Belgium in 1844, where he would create his business Fritz and sell "la pomme de terre frite à l'instar de Paris" 'Paris-style fried potatoes'.[32][33] The modern style of fries born in Paris around 1855 is different from the domestic fried potato that existed in the 18th century.

History

As versions of the meal have been served for over a century, its origin remains ambiguous.[6] The popular book The Art of Cookery Made Plain and Easy by Hannah Glasse included a recipe in 1758 as "Hamburgh sausage", which suggested to serve it "roasted with toasted bread under it". A similar snack was also popular in Hamburg by the name "Rundstück warm" ("bread roll warm") in 1869 or earlier,[7] and supposedly eaten by many emigrants on their way to America, but may have contained roasted beefsteak rather than Frikadeller. Hamburg steak is reported to have been served between two pieces of bread on the Hamburg America Line, which began operations in 1847. Each of these may mark the invention of the Hamburger, and explain the name.

History

The origin of halo-halo is traced to the pre-war Japanese Filipinos and the Japanese kakigōri class of desserts. One of the earliest versions of halo-halo was a dessert known locally as mongo-ya in Japanese which consisted of only mung beans (Tagalogmonggo or munggo, used in place of red azuki beans from Japan), boiled and cooked in syrup (minatamis na monggo), served on top of crushed ice with milk and sugar. Over time, more native ingredients were added, resulting in the creation and development of the modern halo-halo. One difference between halo-halo and its Japanese ancestor is the placement of ingredients mostly under the ice instead of on top of it. The original monggo con hielo type can still be found today along with similar variations using sweet corn (maiz con hielo) or saba bananas (saba con hielo).[1][2]

Some authors specifically attribute halo-halo to the 1920s or 1930s Japanese migrants in the Quinta Market of Quiapo, Manila, due to its proximity to the Insular Ice Plant, which was Quiapo's main ice supply.[3]

The spelling of "halo-halo" is considered to be incorrect by the Commission on the Filipino Language, which prescribes "haluhalo". The word is an adjective meaning "mixed [together]" in Tagalog, a reduplication of the Tagalog verb halo "to mix"

1880s-1930s When the term "milkshake" was first used in print in 1885, milkshakes were an alcoholic whiskey drink that has been described as a "sturdy, healthful eggnog type of drink, with eggs, whiskey, etc., served as a tonic as well as a treat".[5] However, by 1900, the term referred to "wholesome drinks made with chocolatestrawberry, or vanilla syrups." By the "early 1900s people were asking for the new treat, often with ice cream." By the 1930s, milkshakes were a popular drink at malt shops, which were the "typical soda fountain of the period ... used by students as a meeting place or hangout.

Batchoy, less commonly spelled batsoy, is a noodle soup made with pork offal, crushed pork cracklingschicken stockbeef loin and round noodles.[1][2] Its origins can be traced to the district of La Paz, Iloilo City in the Philippines, hence it is often referred to as La Paz Batchoy.

Origin[edit]

Batchoy's true origin is inconclusive. Documented accounts include the following:

  • Ted's Oldtimer Lapaz Batchoy is the Philippine's largest Lapaz Batchoy chain with more than 20 outlets nationwide.
  • Inggo's Batchoy opened his Batchoy stall in 1922 and rumored to be the real first batchoy shop in La Paz Iloilo City, 16 years Ahead than Deco's La Paz Batchoy Shop, which opened in 1938
  • The dish was concocted by Federico Guilergan Sr. in 1938 in Iloilo[3] His recipe called for a mixture of broth, noodles, beef and pork. The soup later evolved into its present form which has become Iloilo City's most popular dish. Federico Guillergan, Jr., the son of the soup's inventor, states that his father at first jokingly called the dish "bats" when asked for its name. Later, he added "choy", from the vegetable dish chop suey.[4]
  • Ted's Oldtimer Lapaz Batchoy by Teodorico "Ted" Lepura opened his first batchoy shop at the La Paz public market in 1945. Run by Lepura, his wife and their children, the shop sold the original La Paz batchoy at that time priced at 20 centavos per bowl. In the 1930s, as a teenager, Lepura learned the basics of making La Paz batchoy while working for a Chinese merchant, and eventually concocted his own version of the dish.[1]
  • Other sources state that the dish originated from the Chinese community in La Paz,[1][5] since the etymology of the name "Batchoy" likely comes from the Hokkien Chinese term (Chinese肉水Pe̍h-ōe-jīBah-chúi), meaning meat soup

Although the roasting of meat on horizontal spits has an ancient history, the shawarma technique—grilling a vertical stack of meat slices and cutting it off as it cooks—first appeared in the 19th-century Ottoman Empire, in what is now Turkey, in the form of doner kebab.[1][11][12] Both the Greek gyros and shawarma are derived from this.[1][2][13] Shawarma, in turn, led to the development during the early 20th century of the contemporary Mexican dish tacos al pastor when it was brought there by Lebanese immigrants.[2][14]
